Elite wild boar salami with tuber aestivum is entirely knife pared and made with ham and shoulder meat. Stuffed into natural gut casing and tied up by hand it is then left to age for around 90 days. The mixture of lean wild boar meat and pork gives it is characteristic pronounced flavour.
